Contributed by Glory Braken, West Milford Animal Shelter ¾ cup sugar 1/3 cup flour ¼ teaspoon salt 2 cups whole milk 3 slightly beaten egg yolks 2 tablespoons butter 1 teaspoon vanilla 1 9” baked and cooled pie shell 3 bananas, sliced In a saucepan, combine sugar, flour and salt; gradually stir in milk. Cook and stir over medium heat until the mixture comes to a boil. Cook 2 minutes longer; remove from heat. Stir a small amount of hot mixture into the egg yolks; return to hot mixture; cook and stir 2 minutes. Remove from heat. Add butter, vanilla; cool to room temperature. Place sliced bananas in pie shell. Pour cream mixture over the sliced bananas. Refrigerate until ready to serve. Add whipped cream and serve. Whipped Cream: Small container heavy cream 1 capful of vanilla a pinch of sugar( if needed) Chill mixing bowl and beaters. Pour heavy cream into chilled mixing bowl and whip. Add vanilla. Add sugar if needed. Whip lightly and quickly to blend.
